GREENSBORO â An N.C. A&T food scientist has won a $2.8 million federal grant to further his research on the health effects of whole grains. The university announced this week that the U.S. Department of Agriculture has awarded a research grant to Shengmin Sang, a professor and lead scientist for functional foods at A&Tâs Center for Excellence in Post-Harvest Technologies at the N.C. Research Campus in Kannapolis. Food scientists have found that increased consumption of whole grains â kernels of wheat, corn, barley, brown rice and other cereal-based foods â might reduce the risk of contracting chronic ailments such as type 2 diabetes, obesity, cancer and cardiovascular diseases.
